INGREDIENTS:
-2 1/2 cups GF oats (I use "Only Oats")
-5 over ripe bananas
-1 tsp vanilla
Use that as the base and add whatever YOU like in your cookies.
I use:
-1/4 cup dried, plain, shredded coconut
-1/4- 1/2 cup cacao nibs or 70%+ dark chocolate chips
- 1/4 cup Brown or golden flax seeds
- 1/4 cup pumkin seeds
1/4 cup goji berries or dried (unsweetened cranberries.
*1 1/2 tsp coconut oil to grease cookie sheet

This cookie is packed with low glycemic index whole oats to keep you full for longer, but also has a quick jolt of natural sugars from the bananas to refuel you after an intense workout. The healthy fats in the cacao, coconut, and flax provide both antioxidants AND essential fatty acids
These cookies are great as a post workout snack on the side of your protein shake or they can make a healthy addition to your little ones lunch kit.
DIRECTIONS:
#1) Pre heat over to 350F
#2) In a mixing bowl, mash up bananas until they are smooth
#3) Add remainder of ingredients (except coconut oil) and mix thouroughly
#4) make doe into 1 1/2" round balls
#5) Grease cookie sheet with coconut oil
#6) bake until golden brown
#7) let sit for 5- 10 min to cool
#8) Nom, Nom, Nom! Eat them up!
* Coconut is nut free, despite it's name. In fact, coconut is actually a fruit!
