My Favorite Ukranian Dishes All Cleaned Up

 
 
When I think of our family gatherings, expandable-waist pants and food coma come to mind. Not going to lie, it is hard not to create a mountain of food on my plate, even just sampling a bite of each dish that is presented. SO in efforts not to completely over-do it and lie on the ground holding my stomach and regretting the few minutes of bliss on my lips every time I crave my grammies recipes, I decided to clean them up!
INGREDIENTS:
 
- 8 medium sized beets (leave leaves on), peeled and chopped
- 2 medium sweet potatoes, chopped 
- 2-3 carrots, peeled and chopped
- handful of green beans
- 1 cup peas or young green garbanzo beans
- 1 medium onion
- 1 1/2 L of vegetable broth
- 1 tbsp buckwheat flour, if desired
- 2 tbsp vinager
- LOTS of dill 
* Dallop of 0% Greek Yogurt, if desired. 

 

 
DIRECTIONS:
 
1) In a large pot, add vegetable broth and all vegetables except dill. Simmer until vegatables are fully cooked.
 
2) Add vinager. *You may also add buckwheat flour to thicken, if desired. 
 
3) Let simmer for 5- 10 more minutes. 
 
4) Mix in dill
 
5) Enjoy topped with a dallop of plain 0% Greek Yogurt.

Grammies Borscht, "Jill Style"

INGREDIENTS:
- 2 cups uncooked brown rice
- 1 tbsp. coconut oil
- 1-2 tbsp garlic
- 1 bunch of beet leaves, chopped
- 1 medium onion, chopped
- 1 cup dill
- 1/2 to 1 cup of vegan coconut "bacon", I like "Sailin On" which you can purchase at Earths General Store in Edmonton. OR if not vegetarian, 1/2 lb ground extra lean turkey breast, chicken, buffalo, or beef.
 
* Dallop of 0% Plain Greek Yogurt to top, if desired.

Lazy Beet Leaf Cabbage Rolls, That Won't Make You Lazy.

DIRECTIONS:
 
1) If using a rice cooker, follow directions and cook brown rice. If using a pot, mix 4 cups of water with 2 cups of brown rice, bring to a boil. Once boiled, stir, then cover and let simmer until rice is fully cooked and water is completely evaporated.
Set Aside.
 
2) In a large sauce pan, add coconut oil and chopped onion. Cook on low- medium heat until onions carmelize.
 
3) If using ground turkey, chicken or beef, cook in a seperate pan on medium, until fully cooked. Set aside.
 
3) Add chopped beet leaves, garlic, cooked rice, and dill to onion mixture. and cook on low-medium for another 10 minutes or until beet leaves are soft.
 
4) Add in cooked ground meat or Vegan Coconut "Bacon, and mix.
 
5) If not vegan, top with a dallop of plain 0% Greek Yogurt.
 
 
INGREDIENTS:
- 8 medium sized beets, chopped
- 2 medium sized potatoes, chopped
- 1 medium sized onion, chopped
- 1 tbsp. of coconut oil
- 1 tsp. curry powder
- 6 cups of chicken stock (or veggie, if vegetarian)
1 tbsp honey
- 1/4 tsp. sea salt
- 1/4 cup almond, hemp or coconut milk
 
*Chives, dill and/or Plain 0% Greek yogurt if desired to top just before serving. 
Prep Time: 5-10 min. Cook Time: 45 min. Serves: approx 8
 
DIRECTIONS:
 
1) In a large sauce pan, add tbsp coconut oil, curry powder,  onion, potatoes, and beets. Fry on medium heat for approximately 8-10 minutes or until onions are soft. 
 
2) Add Chicken/Veggie Stock, salt, honey, and almond/coconut milk and simmer on medium-low for 1/2 an hour or until all the vegatables are tender. 
 
3) Transfer to blender or food processer and blend until smooth. 
 
4) Transfer pureed mixture back into the sauce pan, keep warm until ready to serve.
 
5) Enjoy topped with dill and or chives, and if not vegan, a dallop of plain 0% Greek Yogurt.
